As a child of ten years, I started to cook because my mother worked at my Dad’s grocery store. It was fortunate for me that we had living with us at that time my two grandmothers, who were refugees from Constantinople, Turkey, now known as Istanbul. This area of Eastern Thrace was inhabited by Greek-speaking and Orthodox Christian believers.

During World War I (1913–1918) my parents, as children, with their parents became refugees and they had to leave their home and real property to the Turks. They traveled to Western Thrace to a city named Kavalla, Greece, which is my birthplace and hometown. I am fortunate because my grandmothers raised me and I learned from them how to cook and other valuable lessons in life. The Byzantine kitchen helps me to control my sugar levels and my diabetes. This is the reason I decided to write this recipe book which I dedicate to diabetics worldwide.
