Beer-Can Poultry is increasing in popularity because many fine new poultry cookers designed to emulate the "beer-can poultry" experience have recently entered the market. The book contains everything you ever wanted to know about brining, injecting, creating mouthwatering rubs and marinades, and cooking using the "beer-can" approach. The bird is infused with moisture during the cooking process while the fats drain away, leaving a moist, nearly fat-free, nutritious, and delicious meal.
