My husband and I have poured our hearts into a successful neighborhood restaurant specializing in, of course, our fantastic native cuisine. It is from the urging of family, friends and customers that I have decided to write this cookbook. The ingredients are easy to find on any local supermarket shelf. They emphasize the exotic and delicious Caribbean fruit, vegetables and spices that give these dishes their unparallel taste and sensuality.  About the Author
Dorette Darby was born in St Elizabeth Jamaica into a large family of nine brothers and sisters. She was raised on a large property known as Lewis Land. Home and land was known for the many variety of fruits trees, home grown vegetables and spices. Learning to cook at an earlier age than 12 years, Dorette was able to help around the house by preparing meals for the workmen as well as the family. After migrating to the United States, Dorette started to cook for co-workers, friends and relatives. She married Charles Darby who had a passion was cooking, had a family Restaurant back in Jamaica and was attending Chef school in Miami. Now they share their passion with the world.
