Summary
CARIBBEAN RECIPES "Old & New" is a Comprehensive Caribbean cookbook with over 400 recipes, some old genuine originals plus newly created in the Caribbean style of cooking.
Many recipes from my restaurant "The Cove" in Barbados, including a very special recipe I prepared for Claudette Colbert- famous American movie actress from silent movies to perhaps late 60's who lived in Barbados.
The book is written in a kind of family memoirs style of gatherings and cooking experiences throughout my life. Those who have bought my first edition tell me that many recipes take them down memory lane with similar family gatherings.
The book includes lots of hints and substitutes concerning food preparation.
12 chapters plus a general breakdown of caribbean foods in the form of a
"PRE CHAT" chapter, which contains a bit about myself, LaurelAnn Morley - the author, a bit about my dad- Gordon Parkinson the artist and illustrator, a section on Caribbean cuisine in general and an A-Z of caribbean foods.
There are 12 food chapters, each separately colour coded in bright Caribbean colours.
Each chapter contains a little story about the chapter followed by the appropriate recipes and food photography.
Each chapter is illustrated with original water colour art sketches done by my father-Gordon Parkinson- famous Barbados artist well known through out the Caribbean.
The chapters have names as follows:

- "Soups & One Pot Meals"- Soups and casseroles
- "From the Market"- Vegetables & starches
- "Catch of the day"- Fish and Shellfish
- "The Black Buck Pots"- All manner of meats
- "Associated island foods"- Some National dishes of a particular island, some created for a particular island with ingredients indigenous to that particular island
- "The Sweet tooth"-desserts
- "Within the Brick Ovens"- Breads, cakes
- "Sugar & Spice"- Sweets and candies
- "Dressing her up"- Chutneys, jams and hot sauces
- "Cheers"- drinks, alcoholic and non alcoholic
- " Miscellaneous" - Miscellaneous recipes as well as section on hints, tips, substitutes and Index.
The book is printed in large font for ease of reading, with recipes that are easy to follow as well a a comphehensive index system. It also contains a page at the end entittled "My own recipes" for you to add any new or given Caribbean recipes.
Both end papers depict photo and sketch avoiding the standard white pages in most cooks.
This book is rright, colourful and contains a very comphensive collection of True Caribbean recipes.
About the Author
I believe strongly that food is part of our culture and heritage, one, which we as West Indians should never forget, never get totally wrapped up in International cuisines and fast foods to the detriment of our traditions and legacy.
From very young I have had this absorbing interest in food and cooking. When I worked for the airlines I travelled extensively, always returning home to recreate dishes from all over the world.
Later, with the coming of my girls, I came home to be a stay-at-home Mum
where I started my own catering business, and wrote my first cookbook entitled "COOKING WITH CARIBBEAN RUM". During this time I also worked as a food columnist with Caribbean Week newspapers, wrote articles for Simply Elegant and Maco magazines. Again, at this period of my life, I worked as a food consultant with a few hotels and restaurants in Barbados.
As life progressed, I finally fulfilled my lifetime dream of opening my own family run restaurant "THE COVE" on the East coast here in Barbados. We specialize in what I term "Caribbeanizing food".
So, to all of you who are born within our shores or have visited our beautiful islands, we hope that you will enjoy these recipes in my new book.
